Thursday, June 25, 2015 - Light straw yellow, clear.
It starts reductive, with some oak mixed with bread and yeast notes. Later some citrus fruit. After time in the glass a sweet bread not emerges. On day two the oak has receded somewhat and is now clearly in the background. Fruit is now more peach, sweet and fine. Overall very enjoyable.
The oak is felt on the palate too, but it has good freshness and a nice acid spine. It improved on day two, balanced and with good tension. Very mineral and long. Oak has now integrated well.
One of the best 2012 white Burgundy I have had. I especially liked its energy.

Some 1dl remained in the bottle and in the fridge for almost a month, and at the end was still drinkable. This must not be a good candidate for premox - but who knows...
