Saturday, October 10, 2015 - Nice nice 2005 Bordeaux. As testament to the vintage, this bottle is absolutely alive and it has, in my humble opinion, at least five years of bottle in it. 30 minutes after opening it began to reveal. French Merlot is such a different animal that California merlot. The Cabernet Sauvignon from 2005 has real defining structure. It seems to me that the whole structure is defined by the Cabernet Sauvignon, while the merlot gives it life. The cab franc ties it all together. I had it with seared hanger steak, mushrooms on arugula. Wow. Wow. Wow. I think there are three more floating around here, I hope. 2017 is near.
