Thursday, December 3, 2015 - I noticed the capsule was sticky, and when I removed it there was more sticky substance on the top of what looked to be a partially sliced cork. With concern, I opened the bottle, and the cork practically flew out. On initial pour the color was bright golden yellow. Initially, lots of petrol on the nose, which blew off and became lemon curd. The wine still has tons of acid, lots of salivation going on, and has great lemon meringue pie taste and a long finish. I'm sorry I wasn't able to hold it for longer, but I'm sure glad that it was still very much drinkable anyway. Put the rest in the fridge for tomorrow.
