Sunday, January 10, 2016 - A saxum tasting at Cooking School (ICASI): Inky purple in color. This was pop and pour and needed more air/time. The nose has black raspberries, spice, and grilled meats. On the palate, this is very tight. As it unwinds in the glass with some vigorous swirling it shows its power. Tons of black raspberry fruit with some smoked meat notes and pepper. Just delicious. Formidable tannins still. Nice acidity.
