Friday, December 23, 2016 - P&p at cellar temp; filled a 500ml bottle to save for tomorrow and began drinking the remainder immediately. Smells fantastic - full blown oxidative/nutty/Madras curry, seemlessly combined with fresh citrus (roughly like sour orange/Meyer lemon), orchard fruit, and chamomile/mint/herbs. On the palate the oxidative character is further counterbalanced by terrific tart acidity together with pronounced salinity, with green apple, lemon, salt, and honey coming through as the dominant flavors, with savory, spicy, and herbaceous nuances. Intense yet nicely balanced. Seems like drink or hold. Good stuff!

Day 2: no discernible change.
