Wednesday, December 31, 2014 - May 2014 disgorgement.

Pale yellow color. At first quite reductive nose with aromas of eggs and some sulphurous smoke. As the reduction slowly blows off, notes of fresh green apples, some stony minerality and hints of smoky earth emerge. The wine is crisp, steely and mineral on the palate with rather light, linear body and racy acidity. Flavors of steely minerality, green apples, some wet stones and a hint of grapefruit. Very austere and precise style counterpointed by very smooth, fine and creamy mousse. Quite long and crisp finish with bracing acidity and focused flavors of steely minerality, gari (fermented ginger), lemon zest, some apple peel and very light autolytic hints of toast crumbs.

Lean and mean Blanc de Blancs but with great precision. The wine is quite austere but not excessively so, meaning that the wine doesn't come across as aggressive but only really focused with laser-like precision. Quite gastronomic style with brightness and acidity that can cut through even quite rich dishes and clean, airy fruit that lets room for more delicate foods. However, what I'd do is let the wine age more, giving it some time to resolve its tightly-wound acid structure and to develop some more obvious autolytic notes. After all, only half a year after disgorgement is pretty soon and some producers don't even release their wines this soon after disgorgement. I'd let the wine age at least 12 months before disgorgement before popping it open, preferably more than two years. Stylish effort with room for further development. Priced according to its quality at 43,80€.
