Friday, March 16, 2018 - Medium saturated ruby red. Perhaps not as dense looking as a heavy Burgundy but not as light as an Oregon Pinot either. Bouquet is intoxicating – cherry liquor, candied lavender. But note, although this wine is far from heavy, it drinks best when it has breathed for an hour. Long and mouthfilling flavors, a slight bitterness on the finish that is not objectionable. I say, drink now and enjoy. But let it breathe. Would be great with Stilton, mild or straightforward flavors. I would not pair this with anything sweet or Oriental. It’s too delicious on its own.
