Wednesday, May 23, 2018 - Tannins have softened. Food pairing should be designed to cut this wine. Some secondary characteristics are present and this is what has me excited for its potential. There is an austere character (Where will it go?). There is nothing unpleasant about this wine. Drink now with red meats (mild game flavors) and some integrated fat. A Louisiana chicken and sausage gumbo with a dark roux would be perfect. I would argue evolution could go either way. Why not hold on to a few bottles and see? There is more age potential.
