Wednesday, June 13, 2018 - An absolutely hedonistic nose laden with umami...yeast, preserved lemon, boiled peanut broth. Unfortunately the palate is brutally acidic and punishing...this could use a little dosage to round things out a bit and bring in the savory elements that are drowned out by the austere and dry style. Does this get better with age as the acidity balances? I’m not sure as it is already pretty tertiary and volatile.
