Monday, July 9, 2018 - Disgorged May 2017. Every time I open a Selosse Substance, makes the day special. Such an unique and almost irreplaceable moment when having the wine, it is bold with intensity but compact and enjoyable. Bright golden color, on the nose, strong yeasty, nutty, with some Sherry sensation, but balanced with minerality and freshness; on the palate, it is dynamic and lingering acidity, minerated lemon, dried apricots, hazelnut, and roasted almond. Would be interesting to do a Substance dinner with different disgorgement dates.
