Saturday, August 4, 2018 - Pulled from the Eurocave and stood up for 10 minutes before using my recently updated Pungo to pour a large glass before returning the bottle to the cellar. We'll see in a couple weeks how well the preservation pin works. Let it sit in the glass for 30+ minutes and the nose is fabulous -- classic rustic, woodsy Bordeaux laced with floral black currants. First taste is filled with wonderfully vibrant and balanced dark fruits and mildly astringent on the mouthfeel. A really "youthful" '96 with plenty of more mileage left on this bottle. Will see how it tastes in a couple weeks. Pairing nicely with the chorizo, triple creme brie and truffle mousse this evening.
