Tuesday, January 1, 2019 - 2018 Visit to Elvio Cogno with Valter Fissore (Ravera, Novello): A Cru from Neive. Vines around 30 years of age on calcareous soil. Maceration 30 days here. Ruby with a little ochre colour. A contrast between the exuberance of the bouquet and the austerity of the palate. A complex, perfumed nose, leaping out of the glass. Red cherries, soil, clove, a little plum, black pepper, spices and dried flowers. In the mouth, quite strict and precise. Elegant, not large scaled. Good refreshing acidity. A good food wine.
