Sunday, March 31, 2019 - Time to start checking the 2012s for premox, and this wine (under DIAM) is in fine form. Lemon curd, crisp pear, chalky minerality, it’s all there. Some have said it’s not showing “Chablis” enough, but let’s understand climate change, and that in most vintages, wines are going to be at least a little bit riper. It still shows as Chablis, with deep minerality and clean flavors. Wonderful wine that is developing very well.
