Wednesday, July 10, 2019 - Dinner at S.K.Y. (Chicago, IL): #16-80. This is surprisingly ripe and powerful, and shows a really lovely earthy tone, as well as a bit of green spice (still!). The fruit is mostly desiccated (prominently apricots) and the sugar has integrated into a round texture and comes off less as sweet. However, given the relatively weak vintage, this didn't survive for that long after opening, and got a little thin and acidic by the end of the dinner.
