Tuesday, November 5, 2019 - Intense smoky cherry nose, thyme/rosemary herbs, a bit of barnyard funk. Fresh cherry and a savory note on the palate. Medium plus acidity, well integrated tannins, good length and balance. Some oxidation apparent in brown-ish color and taste.

Great with mushroom quiche!

From the producer's website: Harvested by hand, destemmed, 50% whole berries, half with spontaneous fermentation. Pressed ten days after the start of fermentation. Élevage twelve months half-and-half stainless-steel tank and used wooden casks.
