But the excitement is on the palate with searing acidity, substantial bitterness, a powerful lees taste, effervescence and a pleasant lime flavor. Not for the timid! This wine is well made and my guess is that it is early days considering all the powerful forces at work. It will be interesting to see how it ages down the line.
