Tuesday, November 26, 2019 - Menthol and light red cherry at first, clearly needs time to open up. After about 40 minutes and a side of salty Provolone-type cheese, this wine began to spread out. The initial ascetic quality gives way to a richer yet restrained cherry festival in your mouth. There are a few different types of cherries mixing together here, and it's fun. But then things get even better: black currants, red currants, red plums, and more tannins suddenly emerge after about 90 minutes. And there's still this persistent, secondary essence of earth and smoke. This is a really enjoyable wine to sip over time and experience the evolution.
