Wednesday, December 25, 2019 - Made the rookie mistake I always do with older vintages of champagne: did not let it warm up or breathe enough before drinking. First glass was a bit boring and acrid as a result.

After about an hour, 30 mins of that out of the fridge, it sparked to life in all its complex glory: yeast/toast on the nose, lemon zest, brioche and slight honey on the palate. Great length and acidity suggests perhaps another 10 years. Just need to remember to let this one sit for a bit after opening.
