Tuesday, May 19, 2020 - Showing some golden honeyed sweetness on the palate with acids still going strong. Spicy mineral nose with lemon rind and turmeric. I feel like both the tertiary notes on the nose and the honeyed notes on the palate are signs of age. Which is the whole reason I started collecting wines 8 years ago, to see if I could perceive with my own senses their aging. So, that’s fun. And, since I am not detecting signs of premature oxidation, I am going to set the aging window to drink my last bottle on my 80th birthday, in 2036.
