Monday, June 29, 2020 - Phenomenal Spring Mountain Cabernet...bold, dark fruit, some bite/grip from the tannin structure that eased the longer the wine was open. Decanted 1.5 hours before consuming, then continued to evolve over 3.5 hours. An interesting streak of mineralogy in the wine, adding to it’s complexity. Drank even better on Night 2 after returned the unconsumed wine back to the bottle over night. No hurry to drink given the tannic structure and how well it help up to the long decant.
