Wednesday, December 2, 2020 - Time has been very good to the wine. Still very young. Decanted 2 hours and it helped. A little tight when it was opened. Very aromatic with blackberry, plum, tar, tobacco, anise and mocha and chocolate. Layers of rich flavors showing more complexity. Blackberry, cassis, anise, mocha, tobacco, plum and chocolate flavors. Very well balanced. Long silky smooth finish. Not really showing much tertiary character, but really good.

    In general, primary character is what comes from the vineyard, the fruit character. Secondary character is usually from the winemaker intervention, oak, malolactic, lees, toast, buttery. Tertiary is the character that develops as the wine ages. Generally, less fruit and more of a leather, truffle, cigar box, tobacco, cedar and mushroom type character.
