Saturday, December 5, 2020 - Decanted for 3.5 hours to the start of the meal and the wine was wonderful. At the end of the meal the wine was even more integrated, smoother and rounder at 4.5 hours in the decanter. Also, let the bottle stand upright for a day before decanting which helped to separate the sediment.
This wine is a powerhouse and nothing short of what everyone expects from Saxum. The nose gave aromas of dark red and blue/black fruits, with a touch of floral (lavender?). The medium plus palate yielded a heavy dose of the same dark red and blue/black fruits, along with some cocoa, earth and spice. The acidity was nicely balanced, and the finish lasted for about half of forever and included a touch of tannin. Would expect this wine to hold for several more years.
This wine, in fact virtually all Saxum wines, need AIR! To drink these wines on a PnP is a waste of great wine, and the loss of a wonderfully satisfying experience.
