Saturday, May 8, 2021 - Saturday evening, pairing with US prime rib. Three hours decant. Deep ruby Color. Dark and smoked fruit, mushroom, actually truffles and wet forest floor, a bit of black pepper. Med+ acidity, full body, high alcohol, Med flavor intensity, Med tannins, long finish. Some green pepper / capsicum and dark fruits initially, feeling quite some Heath, pepper is quite prevalent, a bit less of the mushroom and truffles in the mouth, so the nose is actually better than the mouth. After more time in the glass, this is getting smoother. Still young, even after a three hour decant, so I will not open the next bottle for a couple of years.
