Saturday, February 7, 2009 - Popped and poured into a decanter. Initial aromas of pepper which at this point I could have confused with spice from the wood. My first sip was a complete surprise - a very faint white pepper on the finish. Over time, (one hour) this wine evolved into a smooth, well made table wine with flavors of currant and black berry. There is a sublte spicyness to this wine. We served this with food: Spring Lamb and a cheese course. Although drinkable now, I will wait a few years and see how this evolves.
