Thursday, November 4, 2021 - Method: About 60 degrees; pop and pour; Cab glass

Look: Medium garnet; many fat, slow legs

Nose: flourless chocolate cake, cedar, eucalyptus, fresh tobacco, red plum, raspberry; fairly intoxicating nose

Palate: raspberry, red plum, eucalyptus; long+ finish crush gravel, dried herbs, eucalyptus, leather, scorched earth; dry; medium+ body; it's as if I get a high- amount of almost 2 different kinds of tannins -- at first, I get round, plush tannins that create a wonderful mouthfeel, and more towards the finish and upon accumulation I get small, powdery, drying tannins; medium+ acid

Overall: Great earthy/herbal nose and complex palate with a very nice mouthfeel, even though the tannins end up accumulating quite a bit. This will probably be better after some more air. This still probably has some upside potential. Great wine.

EDIT: with some air (bottle open for a couple hours) the tannins get quite plush and the wine is singing.
