Friday, November 19, 2021 - Wines with 312 Fish Market (Chicago, IL): Distinctly different from the two Meursault bottlings in our mini flight, this wine definitely felt racier and lighter than the more heavyset Meursaults. I served these single blind to myself, and I was able to identify this correctly as the Puligny. At first, this felt quite dilute and lacking in a lot of the weight and flavour of the Meursaults, but it did have more lift and the acids felt a little brighter. With time, this definitely filled out very nicely, but it never lost the more shapely mineral profile. I liked this the least at first; I'm not sure that's the case after a few hours.
