Saturday, October 16, 2021 - (Disgorged in March 2019, base year 2009 with a perpetual reserve going back to 1969, 50% Pinot Noir and 50% Chardonnay, dosage 8 gr/l)
Light yellow colour with a stream of very fine bubbles. Lovely nose showing biscuits, citrus, flint and some dried herbs in a pleasant way. Refreshing palate showing lime citrus acidity combined with yellow plums and opens up on the finish showing a vegetal note. With extra time in the glass it opens up with cream and It’s been a year since last time I tried this and it has gained from the extra post-disgorgement time and feels more integrated now, but still in a very fresh and lemon driven style.
(Probably best with 3-9 years of extra cellaring)
