Monday, January 17, 2022 - TLDR: Salty pear. Yum!
Nose is lots of fun—Salty, buttery almost Gorgonzola nose with peppery fennel/microgreens/spicy ginger vegetal aroma; grapefruit & lime. Palate has a salty, slightly yeasty pear syrup quality before drying to a precise, tart single point. I can imagine countless other winemakers’ iterations of this wine that tried to be more “serious”, harvested later, maybe even oaked, and would just be sucky, hot, oaky wines. This is still refreshing on some level—thank god.
