Thursday, January 20, 2022 - A bit more evolved than the previous bottles. Did I wait too long? Showing golden straw color. Nose of wax, cheese, almonds. Pear, honey, crushed rock / mineral, nectarine and an evolved cheese w/ a grassy gravel saline finish 45+. Interesting and still very good but preferred drinking earlier.
