Saturday, December 26, 2020 - Medium golden with nice tiny bubbles.
Very intense deep and complex aromas of ginger bread, ripe red Berries : rapsberry, red currant and red cherries. some hints of old oak.
It has a nice frothy mousse followed by a full body for a champagne. High acidity with similar flavours of red berries, confit lemon and spices. Mineral. Very long and complex finish. Still young.
This is a serious champagne that screams for food. I think it needs few more years in bottle to fully integrate.
