Thursday, February 10, 2011 - Poured out from a full bottle into 2 half bottles. Recorked and brought a half bottle to the restaurant. Bottle breathed for an hour and drank over hour and half

Nose: From the first pour it had vibrant red fruits with some eucalyptus. As it opened up during the lunch, the nose developed a nice minty and mineral aspect along with some smoke. Very nice cab franc notes.

Taste: The ripeness of the 05 vintage for the Loire is definitely present. The initial attack bore the same minty eucalyptus flavours which quickly gave way to a very rich and lovely mid-palate burst of red currants and strawberries with a touch of parsley. It finished with off with a nice load of crushed rock and minerals. Brilliant acidity throughout with was a perfect foil with the various food that we had; it could stand up to the striploin with morel sauce as it brought out the innate sweetness in both the meat and wine.

Very versatile too as it matched very well with my squid salad & tapenade and my prawn pasta. A medium bodied wine but due to the acidity and minerals it had a constant sensation of being very fresh with fine dusty tannins holding up the wine quite nicely. This wine is drinking very well now and should continue to do so for at most 3 more years. Good thing I waited 3 years before opening this bottle.
