Saturday, January 20, 2007 - Had with two amazing cheeses-Comte Gruyeres, and Cacio Tartufo (from Costco!) The Gruyeres was butter nutty and amazing-it brought out a sweetness in the wine that brought out a sweetness of honeydew melon. The intenseness of the Tartufo cheese with the large slices of black truffle (not just shavings-explains the $18.00 a lb.!) had a smoky earthy flavor that brought out a somewhat salty taste at the beginning then turned to a rounded feel with a bit of tartness (without being bitter) but seemed to make the finish longer and what seemed to me as an earthy(?) intensity just as the truffle had tasted. (I so wish I knew more terminology to describe what i am tasting-but I am a pathetic newbie-must be patient-must taste more wine to LEARN!) On another note, this wine, to me, seemed to be better closer to room temperature (as was the cheese) than some other whites I have tried. Interestingly enough-I did not care for this wine stand alone.
