Sunday, January 25, 2015 - light yellow colour with nice steady small bubbles. minerality, brioche, and green apples on the nose. tart and citrusy on the palate with a gentle creaminess that carries into the finish. it is better with food.

(with alaskan king crab on avocado, endive and mustard)
