Monday, June 27, 2022 - 2nd of 6 bottles. Trying to drink one every 2-3 years to see how it evolves. Decanted for one hour and then drank over the next two with and without food. Beautiful nose. Fruit, berries, were more prevalent. A bit of a chocolate/coffee note. Bit of leather. The last glass still showed a lot of tannins and acidity. Looking forward to the balance.

Pork tenderloin with a berry jam and fig balsamic sauce. Went very nicely as the sauce amplified the fruit in the wine.
