Wednesday, July 28, 2021 - Drank with a cowboy ribeye at Shula's Lake Buena Vista. Had them decant at cellar temp 2 hours pre-dinner, and the wine sat for about another hour table side before drinking. Continued to open over fourth hour. Still very vibrant and fresh, dark red berries, dust, plenty of acidity to balance steak. Drinking great but probably still a few years from declining.
