Friday, April 10, 2009 - Impression only. Had a glass as a little appertif before dinner at the Winery Restaurant in Tustin. Sommelier recommendation. Soft and only lightly toasted on the nose with underlying light citrus and apple notes. Flavor is one of the most balanced bubblies that I have ever come across. A great blend of pears and light biscuit flavors, neither overpowered, and both showed beautifully. Really excellent stuff and I would like to get a bottle to see how it fares through more than a glass.
