Friday, January 27, 2012 - Light golden color with medium sized relaxed bubbles. Nose: baked and fresh apple and Meyer lemon with accents of honey roasted mixed nuts, toasty biscuit, vanilla, white flowers, and a salty oyster-shell minerality. Medium body with soft, full effervescence on the dry palate: fresh and baked green apple, lemon/lime, and a hint of strawberry fruit framed by toasty biscuit/lees, ginger, honey roasted nuts, lemon/lime peel, vanilla, and chalk. Aggressive acidity. Lingering apple skin, chalk, and honey roasted nuts on the long dry finish. Classic Champagne profile. An excellent NV that's well balanced, delicious now, and should also improve with 2-5 years in the cellar.
