Monday, March 8, 2021 - 12.0% abv. Light gold, almost clear. Leggy in glass. Tiny bubbles. Straw, green apple, limestone, bread on nose. Effervescent in mouth, bright attack that fades rather quickly, med plus weight, medium length finish, quite dry. Mostly stone fruits, chalk, just a hint of Asian pear and bread. This would be great wine with oysters and caviar, sushi, Brie and bread. Decent quality - I’m not very experienced with bubbles so can’t predict cellar life
