Friday, July 23, 2021 - A lost Friday afternoon gathering – Champagne and Burgundy (Blacksalt, Washington DC): Perfectly precise textbook Chablis nose displaying pure white fruit, pear, granny smith, lemon curd, lemon, oyster jus, beeswax, saline, white flower and wet stone. There is a hint of wet sox in the beginning that blew off. Perfectly integrated palate, layers upon layers of pure white fruit, good richness yet laser like focus and excellent energy, bright acidity, strong wet stone mineral and a long pure white fruit driven finish with white flower and wet stone at the end. It gets even fresher with air. I typically prefer Raveneau but this is as good as Chablis gets.
