Saturday, March 16, 2019 - Slow ox’d for 60 mins, then drank over the next 2 hrs. This was truly excellent. Drinking at or near peak, I suspect. As usual, patience pays off big time with this bottling. Perhaps what I enjoyed the most was the purity of the fruit, unencumbered by oak. Some very enjoyable hints of tertiaries (esp. tobacco and dry leaves). Wonderful acidity. Paired beautifully with braised pork shoulder.
