Monday, October 30, 2006 - Absolutely gorgeous, with a tightly structured raspberry/cherry, gamey, briary-spicy profile. About three hours later-- just in time for dinner-- it clamped down like a Pit Bull's jaw. The nose was all heat, and the palate was all tannins. It was on the rebound at 10PM, with no discernible heat. Rare beef, pepper, and cocoa were much more prominent than fruit on the nose. On the palate, it was still fiercely astringent. It needed a full day of air to resolve itself on the palate to the point where we enjoyed it. This shows great potential, but lay it down for a decade-- at least.
