Wednesday, September 26, 2007 - Decanted for 2 hours. Average Pinot Noir color. A decently dirty nose, with a few cherries and a couple more strawberries poking through. Cherries and strawberries on the palate, but not really on the finish. Very pretty on the palate, though; I almost don't want to swallow. A bit of floral is present as well. However, when you swallow this instantly turns dirty again, and rather dry. Tastes almost salty, and then hits with the definite taste of prosciutto 5 seconds later. Definitely better between hours 2-3 than after the first hour, as the fruit begins to reveal itself on the finish. This could still last 3-5 years easy.
