Sunday, April 4, 2021 - A joy to drink and the perfect pairing for Easter dinner with grilled Colorado rib lamb chops. Rich and aromatic, like velvet on the tongue, with tannin smooth as silk. Drinking beautifully now and I don't see much room for improvement with further ageing. Decanted for about 3 hours, which was not really necessary, since the aromas were leaping out of the decanter as I was pouring. Plenty of sediment in the bottle, but most, if not all of it remained stuck to the bottle during the decanting process.

I previously had he opportunity to taste the regular bottling of Caymus Cab and the Special Selection Cab side by side and the difference was like night & day.
