Saturday, August 14, 2021 - This is my third evening with this wine, and it has got better and better. But what a sobering (horribile dictu!) thought that you have to keep a wine of this quality for eight days before it delivers its best. Where do we put the bottle for the other seven days. Where do we find the Selbstbeherrschung to leave it alone? Imposssible.

But we are now there, enfin. What a wonderful dense and compact nose - typical Fevre where full fruit is matched by structure; on the palate, an almost herbaceious (is that how you spell it?) intriguing combination of flavours - mineral, pear, green tropical, but all held together by a formal precision that speaks of wine making skills that are exemplary.
