Wednesday, January 5, 2022 - This still has a fair amount of mildly harsh tannins. The fruit is well aged and mostly gone. Mild to moderate acidity. It is hard to say if additional aging will smooth this out to the degree that the other elements will not suffer. It is a gamble to hold until 2025.
