Monday, January 28, 2019 - Wine Dojo - Discombobulated by Bubbles (The Only Champagne Bar in Houston): A: Fine Persistent mousse. Salmon pink
N: cream, bread, toast, raspberry, strawberry, red currant, dried orange peel, chalk, woody apple skin and toast.\
P: Dry, medium body, high acid, no phenolic bitterness, medium (+) intensity, medium (-) alcohol, medium (+) finish
C: BLIC? Not complex but a very good quality wine. Fresh youthful style. it has 15% Pinot Noir and the rest is chardonnay. 6g/l dosage. Sure you can hold this for another few years to encourage depth but if you want that fresh style, drink up.
