Sunday, February 28, 2021 - Opened yesterday to pair with our "lobster bolognese" course in our winter truffle celebration. This was overshadowed then by the Bollinger VVF, but it is stunning today (with leftovers of the same course). The dish: a base of filini paata, with a mushroom, carrot, shallot, onion, and celery ragout (cooked down with some mushroom and vegetable stock), lobster pieces poached in a truffle infused brown butter, and a black truffle foam. The wine: wow. On the nose: smoked hazelnuts, lemon curd, nettle. On the palate: fantastic acidity, lovely density, loads of wet stony minerality, lemon, soft nuttiness and a tangy nettle spice. Excellent length. Fantastic.
