Wednesday, July 21, 2021 - Châine dinner at Bindille. Served with pork belly and duck in a cherry Demi glace. From the wine was poured I knew this was special. Rosey rich red to the rim and very clear. Nose, young and a lot of earth and cassis. Palette war Firm—showing no weakness. Long finish. Nose continued to improve. Remarkable for 32yo. Can improve to 2030.
