Saturday, April 3, 2021 - Popped and poured because Laura decided last minute she wanted a Riesling. Cellar temp (53F) which was about perfect. Colder left it a bit mute. Sipping on a glass after dinner, and the classic Grunhaus/Abstberg profile is on full display. Yellow peach is splashed with lime juice. There’s a chalky phenolic bite in the mid-palate, and bright finishing acids. The sweetness is at full Spätlese level, but the acidity cuts through it like a Ginzu knife through a tin can and then a tomato! The finish is what really gets me, as there is a dramatic uptick in complexity of flavor, but it keeps changing, faster than I can get a handle on it. Maybe in a few more years it will settle down, or maybe it will get even more kaleidoscopic. Fascinating.
