Monday, January 2, 2023 - From magnum. I have been skeptical towards the wines of domaine Fevre over the last decade. They just never seem to age, and they are just hard and unwelcoming. But maybe this is because we are drinking these wines too early. This bottle may be proof of that. Although it still is very young in color - almost watery, but with green brilliance - the nose has evolved to include some fascinating tones of vanilla and tropical fruit in addition to the classic notes of lemon, green apples, and a hint of salt and oyster. Medium attack on the palate, the wine explodes in a rainbow of citrus flavors on the mid-palate, and leaves some sweeter fruit tone on the finish. Very long, sits for a minute or more. Searing acidity dominates the finish, so this is clearly a wine that could benefit from 5-10 years more of age (in magnum). Good now at ten years of age, but not a wine to buy if you plan to drink your Chablis early.
